Healthy Sweet Potato Sabzi
The Trigunas are present in every person in different proportions. Without Tamas one would not sleep, without Rajas one would lack dynamism and without Sattva life would be uninspiring, lacking the higher human qualities.
The food we eat has enormous influence on us physically, mentally, emotionally and spiritually. Food that is fresh close to nature, nourishing vegetarian and made with love promotes a clear mind and is Sattvik.
A predominantly Rajasic diet that is high on spices, caffeine, garlic, eggs, meat, alcohol, food made in anger, fried food destroys the mind-body equilibrium, feeding the body at the expense of the mind.
Tamasic foods is highly processed, microwaved and frozen food, require lot of energy to digest can dull the mind and drag one into a state of inertia, laziness and cause a host of health issues.
To increase Sattva and reduce both Rajas and Tamas, eat Sattvik food and enjoy activities and environments that produce joy and positive thoughts.
One cup of sweet potatoes contains six grams of fiber, and over 700% the daily value of vitamin A. Great source of vitamin C, manganese, B6 and potassium. Sweet potatoes are also rich in antioxidants which protect the body from free radicals. Excess free radicals in the body can lead to chronic diseases and eating more foods rich in antioxidants like sweet potatoes can help reduce the risk of chronic disease and inflammation in the body. Here is a simple and easy to make Sweet potato Sabzi.
INGREDIENTS
2 cups grated sweet potato with skin
1 tblspn ghee
1 tsp cumin seeds
1 tsp grated ginger
1 green chilli chopped
1/2 tsp pepper
Salt to taste
Dry roasted peanuts for garnish.
STEPS
- Wash and grate the sweet potato
- Heat a pan and add ghee
- Add the cumin seeds, ginger, green chilli and sweet potatoes
- Saute for 2-3 minutes
- Add the salt and pepper and sprinkle some water.
- Cover and cook in medium heat for 5 mins till cooked yet slightly firm.
- Garnish with peanuts
- Enjoy !!!
