Super Soft Fluffy Idli batter recipe with Vitamix
Being away from India I have struggled to get the perfect idli batter recipe for years. The first time I tried to make the batter was a hilarious episode that I can never forget. It was a cold month of Feb and I was craving for super soft idlis. Called Amma and got the recipe from her 4:1 Parboiled rice and Urad. I got Uncle Bens parboiled rice and Urad dal ....and made the batter...waited waited waited for it to ferment for 3 days !!!! it did not ferment but still went ahead and made the idlis...and the idlis turned out to be like soap 😂.
Years and Years of experiments later some hits and many misses ....finally this super easy idli batter recipe is always a winner. Ok so lets start with the rice I use the Laxmi Organic Idli rice and organic white whole urad. Another trick I learnt this year when I visited my Aunt in Kerala was not to soak the Urad overnight. Urad needs to be soaked only for couple of hours.
Some tips to be followed are washing of the rice. I wash it at least 5-7 times till the water becomes clear. And....not to wash the Urad dal. Again its up to you if u r comfortable not washing the urad, I give it a quick wash and don't scrub it like I do the rice !!
If you have the traditional grinder from India its the best. But the Vitamix is also an equally strong contender to the # 1 spot. Its super super quick hardly takes 5 minutes for grinding and clean up is a breeze. This is my personal opinion and not a sponsored post by Vitamix.
Fermenting the batter is the key to get super soft idlis. And if you are in a cold cold place like where I am fermenting can take weeks 😓. Well there is workaround for everything and the trick is to turn the light on in your oven and fermenting your batter in the oven. DO NOT turn on the temperature just turn on the lights.
INGREDIENTS :
5 cups Organic Idli rice (this is parboiled rice specially for idli, available in Indian stores)
1 cup and a handful of white round urad dal (not broken)
1 tblspn methi seeds
1 tblspn salt
STEPS :
- Wash the rice with water at least 5-7 times till the water becomes clear and no white residue.
- Soak the rice in water overnight with 1 tblspn of methi seeds.
- Soak the Urad dal in water for 2 -3 hours max and not overnight.
- First grind the Urad dal in vitamix with just 1/4 cup of the urad soaked water. Keep the rest of the urad water to grind the rice. I use the ice crush option in Vitamix for grinding.
- Next drain the water from rice and grind it in Vitamix ice crush option with water from the soaked urad. The consitency should be semi thick and not watery.
- Then give a good mix to the ground Urad , Rice, Salt with a laddle for at least 10 minutes.
- Turn on the light in the oven and place your batter for fermenting. Use a big pot for the batter as the fermentation process rises the initial batter at least 4 times.This process takes 8-10 hours. If you are in a warm tropical area you can skip the oven and ferment it on ur counter.
- The Perfect Idli batter is Ready ....Enjoy !!!
