Barnyard Millet Dosa




2023 has been declared by the UN as the International Year of the Millet. Millets have been a part of our traditional Indian diets for centuries. Millets are not just tasty but are packed with health benefits and help address health issues like diabetes, cholesterol, and weight loss. Millet is a highly underrated yet easy-to-grow sustainable crop suitable for any arid soil. They can be easily grown in regions where other cereal crops, like wheat, struggle because of their resistance to difficult growing conditions. Millets on the other hand require little water and ground fertility making them a sustainable and earth-friendly crop.

Millets are a powerhouse of nutrition and contain more dietary fibre, iron and calcium than wheat or rice. Research had shown millets as good defence in the fight against diabetes. Millets have a low glycemic index, which means such foods have lesser impact on blood glucose levels than foods that are higher up in the index. 

The Barnyard millet or Santa rice as it is popular know has high levels of protein, calcium, iron, minerals and vitamin B complex. It is also low in carbohydrates and gluten free, making it a boon for those with gluten allergies, type II diabetes and cardiovascular diseases. Also known as Kurthiravali, Udalu, Oodalu, Shyama, Moraiyo Sanwa rice , this millet almost tastes like broken rice when cooked.

Here is an easy way to introduce this millet in your diet - Millet dosa. This recipe always is a hit at home, and tastes better and crispier than the dosa I make with rice. I tried it two ways one with some oil while making the dosa and an oil free too and both turned out crisp and yummy. 


INGREDIENTS

3 cups barnyard millet

1 cup urad dal

1 cup poha

1 tblspn methi seeds

1 tsp salt

STEPS

1. Wash and rinse all the ingredients except salt for 3-4 with water.

2. Soak the washed ingredients for 3-4 hours

3. Grind them all together to fine paste.

4. Add Salt and mix well.

5. Leave it overnight or 6-8 hrs to ferment.

6. Heat a Dosa Tawa and pour some batter and spread. Let it cook for 30 secs and then turn. 

7. Enjoy hot crisp millet dosa !


STEP BY STEP INSTRUCTIONS WITH PICTURES

Assemble all ingredients


Add all ingredients except salt to a mixing bowl and wash and rinse with water 3-4 times till water is clear


Soak in water for 3-4 hours

Grind to fine paste, I use the ice crush setting in Vitamix for grinding dosa.

Spread a ladle full of batter on a hot tawa cook for 30 secs

When cooked for around 30 seconds it looks like this


When one side is cooked flip the dosa and cook for 10-15 secs
