Sprouted Horsegram / Kulith/ Kollu Puzhukku




Did u know that Horsegram is the most protein rich pulse found on earth and that is why Race horses are fed this pulse and that's how it gets its name !

Kulith the super pulse has been used since ages in Indian cooking. From the Rasams and Puzhukku of the South, Pitla and Usals of West, to the kitchris of Himachal Pradesh this humble pulse rarely gets its due in todays Health Kitchens. 

There goes a saying in Tamil ' Ellachavanukku Ellu Kudu, Kozhuthavanakku Kollu Kudu". Which means give Sesame seeds to the one who is thin and frail, and give Horsegram to the one who is obese.

Horsegram is an excellent diuretic and is effective in increasing urine flow and thus also helps prevention and removal of kidney stones. 

Highly beneficial in healing mouth and peptic ulcers due to the presence of phytosterol esters.

Excellent for the building immunity it also aids in reducing cough, cold and congestion. 

It is also low in fat making it healthier for the heart. 

A very diabetic friendly pulse due to its low glycemic index and high fibre. 

It has the highest calcium content among pulses and is a boon for healthy bones. 

Horse gram contains iron in high levels, which helps to cure irregular menstrual cycles. It also increases your blood hemoglobin due to its high iron content.

Soaking, sprouting and cooking horse gram significantly reduces the phytic acid.  Phytic acid is an anti-nutrient,  that means it can stop your body from absorbing all that nutrient goodness. So always soak, sprout and cook this pulse. 

Here is  a simple and easy recipe Kollu Puzhukku from the Ayurvedic kitchens of Kerala.. Best served with Rice kanji, steamed rice or even rotis !


INGREDIENTS:

1/2 cup dry kollu (which turns to one cup  when soaked and sprouted) 

2 cups chopped raw cooking banana

1 tblspn crushed black pepper

1/2 tsp turmeric powder

some curry leaves

salt to taste

1 tblspn coconut oil

Water for cooking


STEPS:

1. Without fail first clean the Horsegram, many times u find small stones in them.  

2. Wash soak and sprout Horsegram.

3. Chop the raw banana in cubes.

4. Add all the ingredients except coconut oil in pressure cooker. Cook for 6-8 whistles (horse gram can take some time to get tender and mushy)

5. Turn off the flame, wait for pressure to release from the pressure cooker.

6. Season with raw organic cold pressed coconut oil.

STEP BY STEP INSTRUCTIONS WITH PICTURES:

Assemble all ingredients


Add all ingredients except oil to pressure cooker with enough water to submerge.


Pressure cook for 6-8 whistles

Turn off stove and add coconut oil

Enjoy !!!
