Immunity boosting Turmeric Ginger Lemon Pickle



My weekly visit to the Indian store and to my surprise heaps of fresh turmeric adorned the fresh grocery aisle. Ahhhhhhh.... January the season when we harvest fresh turmeric in India just in time for Pongal. Flashes of images celebrating Pongal with family back home fill my memory and my eyes swell with longing of the warmth of family get togethers during festive season back home. I pick up the turmeric to recreate the memories for my kids here and an easy way to add the goodness of turmeric to their diet. 

Today I would like to bring an extremely simple easy tasty and goodness packed pickle. A no fuss fresh turmeric ginger lemon  green chilli and some salt pickle.  

The Star ingredient of turmeric - Curcumin is an antioxidant, anti bacterial, anti viral , anti microbial and anti inflammatory all rolled in one ! It is excellent to aid digestion, boost your immune system, relieve arthritic pain, detox live, heal infections and delay neurodegenerative diseases. 

Ginger know for its digestive properties, is also good for pain relief and healing sore throats or cold. Nothing like a steaming cup of adrak ki chai to stem the flood of a streaming nose.

Lemon store house of vitamin c is also excellent for detox.

Well enough benefits to add this power packed pickle to our diet daily. 

This pickle was a staple back home in winters and my favourite combination was to have it with dahi rice...yummmmmm

INGREDIENTS

1/2 cup washed peeled and chopped fresh Turmeric

1/2 cup washed peeled and chopped fresh Ginger

1/2 cup lemon juice OR 1/2 cup chopped Lemons/Lime (your choice)

chopped green chillies as per ur taste or 2 tblspns crushed peppercorns (again ur choice)

1 tsp Sea Salt


STEPS

Just add all the ingredients in a Jar, close it and give it a good shake.

Let it ferment in a sunny area for 4-5 days.
