Sattvik Chutney Podi for Idli / Dosa
Urad dal also know as split black gram dal is widely used lentil in Indian cooking. An extremely good source of protein, vitamin B, Folic Acid, Iron, Magnesium, Potassium. This dal is given to girls when they attain puberty and also pregnant woman. The sesame seeds gives a good boost of calcium to this podi and when mixed with good fats like ghee/ sesame oil or coconut oil it aids in assimilation of proteins , vitamins and minerals to the body.
This Chutney Podi is a basic simple recipe with roasted urad dal, sesame seeds and spices. It makes a perfect side for idli, dosa, rice or even parathas. This is a staple you will find in every South Indian home. Growing up Amma used to make fresh batch every other week and we would have it for breakfast with idli, dosa, adai or even spread on a roti roll. Usually it is made with dry red chillies , the recipe below is perfect sattvik version as I often used to get severe heartburn with the dry red chillies.
INGREDIENTS
1 cup split black gram dal/ urad dal
1/4 cup sesame seeds
1 cup curry leaves
1 tablespoon black peppercorns as per taste
1/2 tsp hing powder, or solid hing size of 4-5 peppercorns
1 tsp salt or adjust as per taste
1 tsp sugar
STEPS
1. Place an iron kadai on the stove over medium heat and slowly dry roast 1 cup or urad dal till it turns to a nice red color and smells well roasted. make sure to roast the dal slowly in medium to low flame so the dal gets cooked well and roasts to perfect crisp red. Once done keep it aside on a plate to cool
2. Next dry roast the sesame seeds till they pop
3. In the same kadai next dry roast the curry leaves till crisp.
4. Next roast the pepper till u get a nice aroma.
5. In the kadai add 1/2 tsp coconut oil and roast the hing powder , or if using whole hing roast till it puffs up.
6. Let all the ingredients cool down and add it to mixer and grind with salt and sugar.
7. Let the powdered mixture cool and store in airtight container.
8. To Serve as a side for idli, mix 1 tablespoon of podi with ghee, coconut oil, sesame oil or any oil of choice and enjoy.
STEP BY STEP INSTRUCTIONS WITH PICTURES
Dry roast urad dal on medium heat till dal turns to a nice deep red
Dry roast sesame seeds till they pop
Dry roast curry leaves till the leaves turn dry and crisp
Dry roast peppercorns till they release a wonderful aroma
Add 1/2 tsp oil and roast hing till it puffs
Cool all the ingredients
Grind all cooled ingredients to a fine / semi coarse powder with salt and sugar
Mix 1 table spoon podi with ghee/ oil and enjoy with idli, dosa or even just like that. ENJOY.....
