Sattvik Beetroot Salad


This is my go to salad for detox, glowing skin and that feel good factor after a meal. If you are looking to incorporate Sattvik food to your diet, I suggest adding one meal / salad say once a day and I highly recommend you start with this Salad. This simple salad with fresh beetroot, coconut and some spices and nuts is sure to become a staple in your home. 

I must admit I was not a big lover of raw beetroots ...during a visit to Isha in Coimbatore had lunch there and fell in love with this beetroot salad. This magical combination of beet ginger lemon coconuts is just out of the world. Loaded with potassium, fibre, vitamin c, dosha correcting ginger this is literally heaven in a plate. Ok enough of me gushing about the salad lets get to my Isha inspired  recipe.

INGREDIENTS

1 beetroot - washed, peeled and grated

1/4 cup shredded coconut

1/4 cup walnuts

1 inch ginger peeled and grated

juice of 1/2 lemon

coriander for garnish

salt and pepper as per taste

STEPS

1. In a wide bowl assemble all the ingredients and mix well

2. cover with plastic wrap and refrigerate for at least 30 mins for all the flavours to incorporate well into the salad.

3. Enjoyyyyyyy

Wash Peel and Grate the Beetroot and Ginger


Add rest of the ingredients and mix well and refrigerate for 30 mins
