Sattvik Beetroot Salad

This is my go to salad for detox, glowing skin and that feel good factor after a meal. If you are looking to incorporate Sattvik food to your diet, I suggest adding one meal / salad say once a day and I highly recommend you start with this Salad. This simple salad with fresh beetroot, coconut and some spices and nuts is sure to become a staple in your home.  I must admit I was not a big lover of raw beetroots ...during a visit to Isha in Coimbatore had lunch there and fell in love with this beetroot salad. This magical combination of beet ginger lemon coconuts is just out of the world. Loaded with potassium, fibre, vitamin c, dosha correcting ginger this is literally heaven in a plate.   Instant Simple Super quick Sattvik Sweet Poha / Aval/ Flattened rice. This is a very easy simple nutritious breakfast made with Poha , banana, coconut, nuts, jaggery and milk. If you are in a hurry and have no time to make an elaborate breakfast then this is for you. Its so easy that even kids can make it in no time.  Every time I make this memories of Kerala comes to mind.  Summer vacations were always in Kerala, when ever we used to pester Paati for a quick snack she would ask my uncle to break open a fresh coconut and cut it to tiny pieces. There would be dry cashews in the store room with the shells on and we kids would break the shell with stones and carefully scrape off the skin and Amma would roast them. Paati would assemble the sweet aval in a urli , garnish with couple of tulsi leaves and first offer some to god. Sattvik Banana Sabzi

Bananas are a very source of vitamins and minerals mainly potassium, vitamin B6, vitamin C , magnesium and dietary fibre. My daughter who usually runs when i ask her to eat banana loves it when I make this with rotis.  In this recipe we stirfry spices with bananas that are ripe yet firm. best would be to take the bananas just before they ripen. you know when we eat a banana thinking its ripe only to realize that its not ripe :) ...those are the bananas we need for this recipe..... Yellow with green streaks and no brown spots.  Ingredients 3 Firm near ripe Bananas 1/2 cup chopped coriander leaves 2 tsp coriander powder 1 tsp pepper powder or to taste 1/4 tsp turmeric powder 1/4 tsp roasted cumin powder 1/4 tsp hing powder 1 tsp kasuri methi 2 tblspn besan roasted 2 tblspn roasted crushed peanuts 2-3 tblspn coconut oil salt to taste 1. Sattvik Quinoa Salad

This quinoa salad is a family favourite. I try to include this at least once a week as it is rich in protein, fibre, B vitamins and dietary minerals. Its a simple salad made with fresh veggies, herbs and is so good for you. Perfect for those hot summer afternoons when you crave something cool and healthy but don't want to turn the stove on. This is a hit with the kids and my girls call it rainbow salad and love to take it to school for lunch.  Ingredients 1 cup cooked quinoa 1/4 cup cubed avocado 1/4 roasted corn 1/4 cup chopped cucumber 1/4 cup chopped tomatoes 1/4 cup peppers 4 dates chopped 1 inch chopped ginger Handful of coriander chopped Juice of 1/2 lime 1/2 tspSalt as per taste 1/2 tsp Pepper, 1/4 tsp roasted cumin powder Combine all the ingredients in a large bowl and give it a good mix.
