Sattvik Quinoa Salad
Ingredients
1 cup cooked quinoa
1/4 cup cubed avocado
1/4 roasted corn
1/4 cup chopped cucumber
1/4 cup chopped tomatoes
1/4 cup peppers
4 dates chopped
1 inch chopped ginger
Handful of coriander chopped
Juice of 1/2 lime
1/2 tspSalt as per taste
1/2 tsp Pepper,
1/4 tsp roasted cumin powder
Combine all the ingredients in a large bowl and give it a good mix. Refridgerate for at least 1/2 hour for the flavours to set into the salad.
Enjoy your super easy, healthy, and Sattvik Quinoa Salad.
Again you can add any veggies, herbs you like to this salad. If you want to increase the protein just throw in a handful of cooked chick peas/ cooked peanuts.
