Sattvik Banana Sabzi


Bananas are a very source of vitamins and minerals mainly potassium, vitamin B6, vitamin C , magnesium and dietary fibre. My daughter who usually runs when i ask her to eat banana loves it when I make this with rotis. 

In this recipe we stirfry spices with bananas that are ripe yet firm. best would be to take the bananas just before they ripen. you know when we eat a banana thinking its ripe only to realize that its not ripe :) ...those are the bananas we need for this recipe..... Yellow with green streaks and no brown spots. 


Ingredients

3 Firm near ripe Bananas

1/2 cup chopped coriander leaves

2 tsp coriander powder

1 tsp pepper powder or to taste

1/4 tsp turmeric powder

1/4 tsp roasted cumin powder

1/4 tsp hing powder

1 tsp kasuri methi

2 tblspn besan roasted

2 tblspn roasted crushed peanuts

2-3 tblspn coconut oil

salt to taste

1. Heat 3 tblspns oil in a pan and add all the ingredients except the bananas and stir in medium heat till u get a good aroma of the spices.

2. Add the bananas and stir for a minute till the bananas are nicely coated with spices.

3. Enjoy your sabzi with rotis.



Step by Step recipe with pictures



Heat a pan and add 3 tblspns of coconut oil 


Add coriander leaves and all the spices and roast them in medium flame


Add the roasted besan and roasted crushed peanuts and give them a quick stir till all the spices incorporate with the besan and peanut.
Now add the sliced bananas and give it a nice stir so the spices nicely coat the bananas for not more than a minute.
