Fruits - All fresh seasonal fruits
Vegetables - Fresh Vegetables, Greens. Here Onion and Garlic are not Sattvik and are to be used more like a medicine.
Whole Grains - Rice, Wheat, Barley, Jowar, Bajra, Makkai, Millets
Lentils - All varieties of deals, sprouts
Nuts and Seeds - Almonds, Walnuts, Cashewnuts, Pumpkin seeds
Milk products - Milk, Ghee, vegan alternatives
Sweetner - Unrefined Jaggery , Honey, Coconut Sugar, Unrefined raw sugar, Maple sugar, molasses
Spices - Ginger is the king of spices in Sattvik food as it balances all the three Doshas. Black pepper, Turmeric, Coriander seeds, Mustard seeds, Jeera, Methi, Tulsi, Cinnamon, Cardamom, Fennel
Plant based oils - cold pressed oils like Coconut, Sesame, Avocado, Olive, Grape, Sunflower
A good place to start if you are planning to include Sattvik food to your diet is by having fresh seasonal fruits and then slowly making one meal a day / couple of days a week Sattvik. Soon you will start to feel the difference and will easily be able to introduce more foods from the list.
Again it's all about balance ....sometimes a little indulgence is always good.
