Carrot Apple Crunch Salad - Isha Sadguru recipe
Prana, the life force or vital energy is a fundamental concept in yogic practice. The yogic practice of pranayama focuses on controlling the breath to enhance the flow of prana and promote wellbeing. This Carrot Apple salad is a perfect way to start your day. Try and start your day with a healthy breakfast and you are more likely to stick to food that is good for you thru the whole day. We all know carrots are so good for us, however I would alway steer clear of raw carrots and just have the occasional piece of carrot in the Sambar !! I had this salad at the Isha centre in coimbatore and it was a game changer. I just love the burst of flavours in this fresh crunchy salad that hits all the right spots !
Carrots rich in beta carotene are converted to vitamin A in our body. Vitamin A is essential for us to grow, reproduce and have a healthy immune system.
Carrots are packed with potassium, Potassium relaxes the tension in our blood vessels which enhances the blood flow circulation and brings down elevated BP.
Loaded with dietary fibre carrots play an important role in maintaining good digestive health. It also helps lower cholesterol.
Rich in lutein and lycopene carrots help maintain good eyesight.
And all of us know that an apple a day keeps the doctor away...so lets make this Amazing Salad right away !
INGREDIENTS :
1 Carrot shredded
1 Apple chopped
2-4 dates seeded and chopped
2 tblspns grated coconut
1 tblspn dry roasted sesame seeds
2 tblspns dry roasted peanuts
Dressing
Juice of 1/2 orange
Juice of 1/2 lime
1 teaspoon honey
1 tblspn olive oil
salt to taste
1/2 tsp black pepper powder
STEPS
- In a blow add the carrots, apples and dates
- In a jar add all ingredients for the dressing and shake well
- Add the dressing to the salad
- Garnish with coconut, sesame seeds and peanuts
- Enjoy !!!
